Quick recipe: Hot Mango & Plantain Glazed Roast Chicken

Spatchcock a whole chicken or use bone-in thighs. Coat generously with 4–5 tablespoons of Hot Mango & Plantain Sauce, getting it under the skin as well as over it. Refrigerate for at least 4 hours — overnight is better. Roast at 200°C for 45–55 minutes, basting once halfway through. The mango and syrup caramelise into a deep, glossy tropical glaze while the scotch bonnet heat builds into every piece. Serve with rice and a fresh salad.
